Dijon-Dill Chicken and Noodles

Whip up a quick and delicious Progresso™ Light soup chicken dinner for two in one skillet under 30 minutes.
Ingredients:
  • 4 oz boneless skinless chicken breast, cut into thin bite-size strips
  • 1/2 cup chopped onion (1 medium)
  • 1 can (18.5 oz) Progresso™ Light vegetable and noodle soup
  • 2 tablespoons Dijon mustard
  • 1/8 teaspoon dried dill weed
  • 1/2 cup uncooked wide egg noodles (1 1/2 oz)
  • 2 cups fresh broccoli florets
  • 1 oz fat-free cream cheese
Instructions:
  • Cook the chicken and onion in a 12-inch nonstick skillet over medium-high heat, stirring constantly, until the onion is tender and the chicken just starts to brown.
  • Add the soup, mustard, and dill weed to the pot and bring to a boil. Mix in the noodles and allow it to return to a boil. Lower the heat to medium, cover, and cook for 6 minutes, occasionally stirring.
  • Toss in the broccoli and cook for an extra 3 to 4 minutes uncovered, stirring often, until the broccoli is just tender-crisp. Mix in the cream cheese until smooth and well combined.
