Whip up a vibrant side dish by mixing carrots and snow pea pods with zesty dill butter.
Ingredients:
  • 1 1/2 cups baby-cut carrots
  • 1 1/2 cups snow (Chinese) pea pods (about 5 oz), strings removed
  • 1 tablespoon butter or margarine
  • 2 teaspoons chopped fresh or 1/2 teaspoon dried dill weed
  • 1/8 teaspoon salt
Instructions:
  • In a 2-quart saucepan, bring 1 inch of water to a boil. Add carrots, cover, and simmer for about 4 minutes until carrots are crisp-tender. Keep the water in the pan.
  • Combine the pea pods with the carrots in a saucepan. Heat them uncovered until boiling, then boil for 2 to 3 minutes, stirring occasionally, until the pea pods are crisp-tender. Drain the vegetables and return them to the saucepan.
  • Combine butter, dill weed, and salt with vegetables, stirring until butter is melted.
