Soft and fluffy dinner rolls made with flour, sugar, yeast, and coconut oil instead of butter.
Ingredients:
  • 5 cups bread flour, divided
  • 0.25 cup white sugar
  • 4 (.25 ounce) packages instant yeast
  • 1.5 teaspoons salt
  • 1.5 cups milk
  • 1 cup water
  • 0.33333334326744 cup coconut oil
  • 1 tablespoon coconut oil
Instructions:
  • In the bowl of a stand mixer with a paddle attachment, mix together 2 1/2 cups of flour, sugar, yeast, and salt.
  • Warm the milk, water, and 1/3 cup of coconut oil in a saucepan until the temperature reaches 120°F (49°C), about 2 to 3 minutes.
  • Pour the milk mixture over the flour and beat on high speed for about 2 minutes until well combined. Stir in the remaining 2 1/2 cups of flour until a soft, sticky dough forms.
  • Transfer the dough onto a lightly floured surface. Knead for approximately 10 minutes until it becomes smooth and elastic.
  • Put the dough in a bowl, cover it with a towel, and allow it to rise in a cozy spot until it doubles in volume, approximately 30 minutes.
  • Grease 24 muffin cups, then shape the dough into 48 equal-sized balls. Place 2 balls into each muffin cup. Cover with a towel and allow to rise in a warm place until doubled in volume, approximately 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • Bake until beautifully golden brown for approximately 20 minutes, then generously brush the tops with 1 tablespoon of luxurious coconut oil.
