Double-Cheese Pepperoni Pizza

Cheesy surprise inside a flavorful Bisquick® pizza crust.
Ingredients:
  • 3 cups Original Bisquick™ mix
  • 2/3 cup very hot water
  • 2 tablespoons vegetable oil
  • 4 smoked string cheese pieces (from 4- or 8-oz package), cut lengthwise in half
  • 1/4 cup Italian-style tomato paste
  • 1 small onion, cut lengthwise in half, then cut crosswise into thin slices
  • 1/2 medium bell pepper, thinly sliced
  • 1 can (4 oz) mushroom pieces and stems, drained
  • 1/2 package (3.5-oz size) sliced pepperoni
  • 1 can (2 1/4 oz) sliced ripe olives, drained, if desired
  • 2 cups shredded mozzarella cheese (8 oz)
Instructions:
  • Combine Bisquick mix, water, and oil in a large bowl until a soft dough forms. Beat vigorously 20 times, then let it stand for 8 minutes.
  • Preheat oven to 450°F with the oven rack on the lowest level. Grease a 12-inch pizza pan with shortening or cooking spray. Press dough onto the bottom and 1 inch over the sides of the pan. Line the edge of the dough with string cheese. Fold a 1-inch edge of the dough over and around the cheese, then press to seal. Bake for 7 minutes.
  • Evenly coat the crust with tomato paste. Layer with onion, bell pepper, mushrooms, pepperoni, and olives. Generously sprinkle with mozzarella cheese. Bake until the crust is golden and cheese is melted, about 8 to 10 minutes.
