Savory potato and bacon soup with fluffy homemade dumplings, perfect with crusty bread and butter.
Ingredients:
  • 1.5 cups all-purpose flour, or more as needed
  • 2 teaspoons salt, divided
  • 1 teaspoon baking powder
  • 0.75 cup water, or as needed
  • 1 tablespoon vegetable oil
  • 6 medium potatoes - peeled and cubed
  • 8 cups water
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 4 ounces sliced bacon, diced
Instructions:
  • Combine flour, a teaspoon of salt, and baking powder in a medium bowl; then set aside.
  • Combine one egg and water in a measuring cup to reach 1 cup; whisk with a fork. Slowly incorporate the egg-water mixture and oil into the flour using a fork until a soft dough forms. Knead the dough by hand until smooth and not sticky, adjusting with flour or water as necessary. Cover the bowl and let it rest while preparing the potatoes.
  • In a large pot, simmer potatoes in 8 cups of water and the remaining 1 teaspoon of salt until tender, for 10 to 15 minutes.
  • In a skillet over medium heat, melt butter. Cook onion and bacon until onion is golden and bacon is cooked, then set aside.
  • Drop small pieces of dough into the boiling potato water once the potatoes are cooked. Turn the dough in your hand to prevent sticking.
  • After adding all the dumplings, incorporate the onion and bacon into the mixture. Pour some of the soup water into the skillet, swirl it to release the flavors, and then add it back to the soup. Switch off the heat and allow the soup to rest for a few minutes before serving.
