Indulge in decadent Easter Rocky Road for a festive treat with loved ones.
Ingredients:
  • 400g dark chocolate, chopped
  • 1 1/4 x 250g packets assorted chocolate mini Easter eggs
  • 100g packet mini marshmallows
  • 100g pistachio
  • 150g dried cranberry
  • 10 sponge finger biscuits, chopped
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • In a microwave-safe bowl, heat the chocolate on high for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth. Allow it to cool for 20 minutes.
  • In a bowl, combine marshmallows, pistachios, cranberries, biscuits, and half of the eggs. Add chocolate and mix gently. Transfer the mixture into a prepared pan and press it down with a spoon to even it out. Lightly press the remaining eggs on top. Cover and refrigerate for at least 2 hours, preferably overnight, until set.
  • Remove the indulgent rocky road from the pan, carefully cut it into 25 delectable pieces, and serve to impress.
