Simplify Turkish pumpkin soup recipe with just 5 ingredients.
Ingredients:
  • 2 pounds pumpkin, peeled and cubed
  • 4 cups chicken broth, divided
  • 1 teaspoon sugar, or more to taste
  • salt and freshly ground black pepper to taste
  • 1 (5.3 ounce) container Greek yogurt
Instructions:
  • In a deep pan over medium-low heat, gently simmer pumpkin with 1/3 of the chicken broth until the pumpkin is soft, about 15 minutes, keeping it covered.
  • Puree the mixture with an immersion blender off the heat. Stir in the rest of the chicken broth, sugar, salt, and pepper. Simmer for about 5 minutes for the flavors to meld together.
  • Serve the soup in bowls with a dollop of Greek yogurt on top.
