Air-fried corn ribs with a Mexican street corn twist topped with cotija cheese and crema con sal.
Ingredients:
  • 4 ears ears corn on the cob
  • 3 tablespoons "Everything but the Elote seasoning" (Trader Joe's®), divided
  • nonstick cooking spray
  • 0.25 cup grated cotija cheese
  • 2 tablespoons Mexican crema, crema fresca
  • 1 tablespoon minced fresh cilantro, or more to taste
Instructions:
  • Heat your air fryer to a sizzling 400 degrees F (200 degrees C) for 7 minutes.
  • Stand the corn cobs upright and use a sharp knife to slice each ear down the middle. Then lay the corn cob halves flat on a cutting board and cut them in half lengthwise to yield 4 'ribs' per ear of corn.
  • Coat all corn ribs with non-stick spray, then generously season with 2 tablespoons of seasoning.
  • Air fry the corn ribs in batches until crispy and golden, totaling 12 minutes. Remove from the air fryer.
  • Drizzle the crema con sal over the corn 'ribs', then sprinkle with cotija cheese and the remaining seasoning. Top it off with chopped cilantro for a vibrant finish.
