Ingredients:
  • 150.00 gm self-raising flour
  • 215.00 gm caster sugar
  • 50g butter, melted
  • 1 egg, lightly beaten
  • 4.40 gm vanilla essence
  • 60ml milk
  • 130.00 gm mashed banana
Instructions:
  • Preheat your oven to 180C (160C fan-forced). Grease a 7cm-deep, 10 x 20cm loaf pan with oil, then line the base and sides with baking paper, leaving a 3cm overhang.
  • In a large bowl, delicately sift the flour, then gently incorporate the sugar. Create a well in the center and introduce the butter, egg, vanilla, milk, and banana. Mix until just blended.
  • Transfer the mixture into the prepared pan and bake for 30-35 minutes until a skewer inserted into the center comes out clean. Allow it to cool in the pan for 10 minutes, then serve warm or transfer to a wire rack to cool completely.
