Moist banana snack cake made with ripe black bananas, ready in under an hour.
Ingredients:
  • 1.25 cups white sugar
  • 0.5 cup butter
  • 0.25 cup sour cream
  • 1 cup mashed bananas
  • 1.5 cups cake flour
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9-inch square pan by greasing and flouring it.
  • In a large bowl, use an electric mixer to cream together butter and sugar until light and fluffy. Beat in eggs until well combined. Dissolve soda in sour cream, then add to the butter mixture and mix well. Stir in mashed bananas, add cake flour and stir until just combined. Finally, mix in vanilla extract before pouring the batter into the prepared pan.
  • Bake in the hot oven until a toothpick inserted in the center comes out clean, approximately 45 minutes.
