Family favorite beef curry with basil.
Ingredients:
  • 36.40 gm olive oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 500g Butcher diced beef
  • 56.00 gm red curry paste
  • 300ml coconut milk
  • 500g kent pumpkin, peeled, seeded and chopped
  • 250.00 ml frozen peas
  • 125.00 ml light cooking cream
  • 62.50 ml basil leaves, torn
  • 125.00 ml peanuts, chopped, to serve
  • 450g pkt steamed jasmine rice, to serve
Instructions:
  • In a deep saucepan over medium heat, heat half of the oil. Sauté the onion for 3 minutes, then add the garlic and cook for 30 seconds. Transfer to a bowl. Heat the remaining oil in the same pan and brown the beef for 2-3 minutes. Return the onion mixture to the pan, stir in the curry paste until all ingredients are coated beautifully.
  • Pour in the luscious coconut milk and simmer gently for 30 minutes until flavors meld. Introduce the pumpkin into the mix and continue cooking for an additional 20 minutes, or until the beef and pumpkin reach desired tenderness. Toss in the peas and cook for 4 minutes. Finish the dish by drizzling with cream and garnishing with fragrant basil and crunchy peanuts. Serve alongside fluffy rice and enjoy!
