Easy caprese bean salad

Serve your main with a simple and delicious Italian salad featuring fresh tomatoes, mozzarella, and bocconcini.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 165.00 ml basil leaves
  • 1 small garlic clove, bruised
  • 5 vine-ripened tomatoes, thickly sliced
  • 350g mixed medley tomatoes, large tomatoes thinly sliced
  • 220g cherry bocconcini, torn
  • 400g can cannellini beans, rinsed, drained
  • 40.00 ml white wine vinegar
Instructions:
  • In a small frying pan over low heat, gently cook the oil with half of the basil for 4 minutes until the basil is just wilted.
  • Transfer the mixture to a bowl and gently fold in the garlic. Allow it to cool to room temperature.
  • Arrange a delightful medley of fresh tomato, creamy bocconcini, and hearty beans on a beautiful serving platter.
  • Strain out the basil and garlic from the oil and discard them. Mix in the vinegar with the seasoned oil. Whisk well to blend. Pour the dressing over the salad and garnish with the leftover basil leaves.
