Elevate winter with quick, flavorful tomato soup, made with betty’s roasted tomato sauce and Progresso broth. Pair with cheesy bread for a comforting meal suitable for any occasion, loved by all, including kids!
Ingredients:
  • 4 cups frozen roasted Roma tomato sauce, thawed
  • 2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
  • 4 (1-inch) slices rustic bread, cut from a round loaf
  • 8 oz fresh mozzarella cheese, cut into 1/4-inch rounds, patted dry
  • 12 large basil leaves, shredded
Instructions:
  • In a 4-quart saucepan, gently simmer the sauce and broth over medium heat. Allow to cook for 5 minutes to blend the flavors. Serve the mixture evenly into 4 bowls.
  • Prepare a cookie sheet by lining it with foil. Preheat the oven to the broil setting. Place the bread on the prepared cookie sheet and broil it with the tops 6 inches from the heat for 1 to 2 minutes, remembering to turn it once, until the edges begin to turn golden brown.
  • Place 3 slices of mozzarella on each slice of bread and broil them 6 inches from the heat for 1 to 2 minutes until the cheese melts and bubbles. Sprinkle basil over the melted cheese and place a slice of bread on each soup bowl.
