Ingredients:
  • 250g unsalted butter, softened
  • 161.25 gm caster sugar
  • 135.00 gm (firmly packed) brown sugar
  • 6.60 gm vanilla essence
  • 750.00 ml plain flour
  • 250.00 ml mini choc chips (or sultanas and currants)
Instructions:
  • Preheat the oven to 160C.
  • Using an electric mixer, whip the butter and sugars until they are light and fluffy.
  • Mix vanilla and eggs together gently until fully incorporated.
  • Turn on the machine while it's off, add the flour, then gradually increase the speed until the flour is fully mixed with the wet ingredients.
  • Mix in your choice of delectable chocolate chips or sweet sultanas.
  • Take small portions of the mixture and swiftly shape them into balls, then place them on a baking tray lined with parchment paper. Work in batches of 12-15, gently flatten the balls, and ensure they are spaced adequately for spreading.
  • Bake until golden brown in preheated oven for 18-20 minutes.
  • Achieve a perfect balance between soft centers and crispy bases.
  • Transfer to a wire rack to cool.
  • Store in an airtight container for up to a week (if they aren't devoured sooner!).
