Crunchy choc-chip microwave cookies recipe

Microwave choc-chip cookies ready in just 30 minutes - quick, easy, and delicious!
Ingredients:
  • 125g butter, chopped
  • 1 egg, lightly beaten
  • 375.00 ml plain flour
  • 59.40 gm firmly packed brown sugar
  • 53.75 gm caster sugar
  • 0.63 gm bicarbonate of soda
  • Pinch of sea salt flakes
  • 142.50 gm dark chocolate melts, halved
  • 125.00 ml dark chocolate chips
Instructions:
  • In a microwave-safe bowl, heat the butter on HIGH for 30 seconds or until melted. Allow it to cool for 2 to 3 minutes before using.
  • Mix in the vanilla and egg until well combined. Then, add in the flour, sugar, bicarbonate of soda, and salt, stirring until fully incorporated. Finally, fold in the chocolate until evenly distributed.
  • Take 2 level tablespoons of the mixture to roll into balls, then gently flatten them between your palms. Place about 4 cookies on a microwave-safe plate lined with baking paper, making sure to leave space for spreading. Microwave on HIGH for 2 to 2 1/2 minutes until cooked but still soft. Allow them to stand for 1 minute, then transfer to a wire rack to cool.
  • Continue the cookie preparation in four separate batches. Serve according to the note.
