Decadent eggless chocolate mousse inspired by a dreamy French cafe dessert from a honeymoon trip.
Ingredients:
  • 0.5 (12 ounce) bag semisweet chocolate chips, or more to taste
  • 1.5 cups heavy whipping cream, divided
  • 0.25 cup hot, strong coffee
  • 0.5 teaspoon vanilla extract
Instructions:
  • Add the chocolate chips to a large bowl.
  • In a small saucepan, gently heat 1/2 cup of cream over medium-high heat until it starts to rise and foam, being mindful to prevent spills, for 3 to 5 minutes. Pour the warm cream over the chocolate chips and let it sit covered for 1 minute.
  • Uncover and gently stir with a spatula until silky. Mix in hot coffee and vanilla extract until chocolate is completely melted.
  • Using an electric mixer, whip the remaining 1 cup of cream in a chilled glass or metal bowl until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined.
  • Transfer the mixture into individual serving glasses and refrigerate until set, for a minimum of 3 hours.
