Indulgent chocolate mousse made with cream and baking chocolate, topped with fresh raspberries or mint leaves for a touch of elegance.
Ingredients:
  • 1 pint (2 cups) heavy whipping cream, well chilled
  • 10 to 12 oz bittersweet baking chocolate (60% to 70% cacao), broken into small pieces
Instructions:
  • Whip the whipping cream in a large bowl at medium speed until stiff peaks form.
  • Melt chocolate in a double boiler or a bowl set over a saucepan of simmering water. Pour the melted chocolate into the whipped cream and gently fold together until just combined (it's okay if there are still a few streaks). Chill in the refrigerator for at least 1 hour before serving.
