Easy Coconut Cherry Bars

Try these delicious almond, coconut, and cherry bars made with Betty Crocker™ Super Moist™ cake mix for a unique dessert option.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 3/4 cup cold butter
  • 1 egg, slightly beaten
  • 1 cup flaked coconut
  • 1/2 cup sliced almonds
  • 2/3 cup cherry preserves (from 12-oz jar)
  • 1/3 cup dried cherries, coarsely chopped
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to 350°F and lightly coat the bottom of an 8-inch square pan with cooking spray.
  • Place the cake mix in a large bowl. Use a pastry blender or two knives to cut in the butter until the mixture resembles coarse crumbs. Set aside 3/4 cup of the crumb mixture. Add the egg to the remaining crumb mixture in the bowl, stirring just until blended. Press the mixture into the bottom of the pan and bake for 15 minutes or until light golden brown around the edges.
  • Combine coconut, almonds, and the reserved crumb mixture in a small bowl; set aside. In a separate small microwavable bowl, heat preserves in the microwave on High for 45 to 60 seconds until warm and slightly melted. Stir in dried cherries and almond extract. Spread the warm preserves over the partially baked crust and sprinkle with the reserved coconut mixture.
  • Bake for an additional 20-25 minutes, or until golden brown. Allow it to cool on a cooling rack for 1 hour before cutting into 16 squares.
