Savory winter vegetable and beef cottage pie - a simple and comforting dish.
Ingredients:
  • 18.20 gm olive oil
  • 500g 5-star mince beef
  • 400g can diced tomatoes
  • 1 tsp Italian dried herbs
  • 255.00 gm beef stock
  • 1 1/2 kg sweet potatoes
  • 41.20 gm milk
  • 250.00 ml frozen peas
  • 1 onion, finely chopped
  • 1 red capsicum, chopped
Instructions:
  • Combine diced tomatoes, fragrant herbs, and flavorful stock in a pot and bring to a boil. Lower the heat and gently simmer the pie filling for 10 minutes. Meanwhile, preheat the oven to 200C (180C fan-forced).
  • In a large, deep frying pan, heat oil over medium heat. Sauté onion and capsicum for 5 mins. Add beef mince and cook for another 5 mins until browned, using a wooden spoon to break up any lumps.
  • Peel the sweet potato and cut into 3cm pieces. Cook until tender, then mash with milk. Mix peas into the mince, transfer to a baking dish, top with mash, and bake for 20 mins.
