Creamy chicken casserole with a buttery cracker crust, perfect for busy nights. Prep ahead for cozy comfort.
Ingredients:
  • 1 sleeve buttery round crackers (such as Ritz®), crushed
  • 2 tablespoons butter, melted
  • 4 cups water
  • 1 (32 fluid ounce) container chicken stock
  • 3 skinless, boneless chicken breast halves, cubed
  • 1 (26 ounce) can condensed cream of chicken soup
  • 1 (24 ounce) container sour cream, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C). Mix crackers and luscious melted butter in a bowl; set aside.
  • In a pot over high heat, bring water and chicken stock to a boil; season generously with salt and black pepper. Add chicken and simmer until no longer pink in the center, about 5 to 7 minutes, stirring occasionally. Drain and set chicken aside.
  • Combine cream of chicken soup and sour cream in a large bowl. Add cooked chicken and mix well. Transfer mixture to a 9x13-inch baking dish and sprinkle cracker mixture on top.
  • Bake in the preheated oven for 25-30 minutes until bubbly.
