Easy Crispy Tofu

Make crispy baked tofu by removing excess water.
Ingredients:
  • 1 (16-ounce) block extra-firm or firm tofu, drained
  • 1 tablespoon soy sauce
  • 1 teaspoon canola or vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon rice wine vinegar
  • 1/2 teaspoon sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons panko or plain breadcrumbs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
Instructions:
  • Prepare the tofu: Cover the bottom of a 9 x 5-inch loaf pan with 4 or 5 paper towels or a folded clean kitchen towel. Place the tofu in the center of the pan and cover it with another layer of paper towels or a kitchen towel. Gently place a second loaf pan on top of the tofu and weigh it down with 3 canned goods or any heavy items. Allow it to sit for 30 minutes to 1 hour until the towels are soaked, and the tofu feels noticeably drier. Alternatively, use a tofu press for quicker results.
  • Preheat the oven to 425°F with a rack in the center. Line a baking sheet with parchment paper or a silicone mat and generously spray with cooking spray.
  • While you prepare the marinade, combine soy sauce, vegetable oil, sesame oil, rice vinegar, and sugar in a medium bowl. Whisk with a fork or small whisk until the sugar is dissolved, approximately 30 seconds. In a separate small bowl, mix together cornstarch, breadcrumbs, salt, and black pepper. Keep both bowls aside for later use.
  • Cut the tofu into cubes: After pressing the tofu, place it on a cutting board. Slice it lengthwise into 2 thin rectangles, stack them, and cut into 24 equal cubes by making 3 lengthwise cuts followed by 2 crosswise cuts.
  • Coat the cubed tofu in the marinade using a rubber spatula or large wooden spoon, ensuring they are evenly covered without breaking them apart. It's fine if there is a small amount of marinade left in the bowl.
  • Coat the marinated tofu cubes with breading, ensuring each side is fully covered. Feel free to crisp up any leftover crumbs in a pan for a delicious topping.
  • Spread tofu evenly on a baking sheet lined with parchment paper. Coat generously with cooking spray and bake until golden and crispy, about 20-25 minutes. Serve hot and refrigerate any leftovers for up to 4 days. For reheating, warm in a nonstick pan with oil over medium heat or in a 350°F oven until heated through. Enjoy! 😊
