Ingredients:
  • Powdered sugar
  • 2 1/2 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 1 1/2 cups granulated sugar
  • 1 cup corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 teaspoon peppermint extract
Instructions:
  • Sprinkle gelatin over 1/2 cup of cold water in a large bowl to soften; then dust a 11x7 1/2x2-inch rectangular baking dish generously with powdered sugar.
  • In a 2-quart saucepan over low heat, carefully dissolve granulated sugar, corn syrup, salt, and 1/2 cup water while stirring constantly. Bring to a boil without stirring until it reaches 250°F on a candy thermometer or forms a pliable ball in very cold water. Remove from heat.
  • **Let's elevate this step for you:** Drizzle the syrup into the softened gelatin while whisking vigorously with an electric mixer on high speed until the mixture turns white and nearly triples in volume. Next, incorporate the peppermint extract and beat on high for an additional minute. Transfer the mixture into a pan and dust with powdered sugar, gently pressing it down with your hands. Allow it to rest uncovered for a minimum of 8 hours to set.
  • Invert pan to release marshmallow mixture onto a cutting board. Use small cookie cutters or a wet knife to form shapes. Store in a sealed container at room temperature for up to 3 weeks.
