Make easy and festive peppermint crisps with kids. Great for homemade Christmas gifts. Simple, budget-friendly ingredients.
Ingredients:
  • 115g caster sugar
  • 1 1/2 tsp peppermint essence
  • 200g dark chocolate
  • 27.20 gm desiccated coconut
Instructions:
  • Prepare a generously greased large baking sheet.
  • In a saucepan, combine sugar and 150ml water over low heat, stirring until sugar dissolves. Keep cooking over medium heat without stirring until the mixture turns a light caramel color. Remove from heat, add one teaspoon of peppermint essence, and swirl it in. Adult supervision is recommended.
  • Spread the mixture on a baking sheet to cool and firm up for 15 minutes. Then, break it into pieces and transfer to a food processor. Pulse until it resembles fine sand. Melt the chocolate in a heatproof bowl over simmering water, then mix in coconut, the rest of the peppermint extract, and peppermint bits once melted.
  • Prepare a baking tray with parchment paper. Spread the mixture evenly to form a 20 x 25cm rectangle. Use a 3cm pastry cutter to create indentations. Chill in the refrigerator for an hour to set. Once firm, remove from the fridge and cut out the circles using the pastry cutter.
  • Prepare the peppermint crisps by packaging them in boxes for gifting to friends. For a delightful dessert, crush any remaining chocolate pieces and gently mix them into softened ice cream.
