Quick and easy veggie flatbread pizza made with a flour tortilla crust, perfect for a satisfying one-person meal in under 30 minutes.
Ingredients:
  • 1 (10 inch) flour tortilla
  • 1.5 tablespoons extra-virgin olive oil
  • 1 pinch dried oregano, or to taste
  • salt and ground black pepper to taste
  • 0.5 cup very thinly sliced zucchini
  • 0.5 tomato, thinly sliced
  • 1 cup baby spinach leaves
  • 0.25 cup sliced green olives
  • 0.25 cup freshly grated Parmesan cheese
  • 1 pinch red pepper flakes
Instructions:
  • Preheat the oven to a toasty 435°F (225°C).
  • Lay the tortilla on a pizza stone and generously brush with 1 tablespoon of flavorful olive oil. Sprinkle with aromatic oregano, a pinch of salt, and a dash of pepper. Arrange a colorful array of zucchini, tomato, spinach, olives, and flavorful Parmesan cheese. Add another sprinkle of oregano, a touch of salt and pepper, then a scattering of zesty red pepper flakes. Finish with a final drizzle of the remaining rich olive oil.
  • Bake until tortilla is crispy and cheese is melted, approximately 15 minutes in the preheated oven. Slice and enjoy.
