Crispy Chinese chicken balls with a golden cornstarch batter, better than restaurant quality.
Ingredients:
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 teaspoon sesame oil
  • 0.5 cup water, or more if needed
  • vegetable oil for frying
  • 5 tablespoons cornstarch
  • 1 pinch ground white pepper
  • 4 boneless skinless chicken breasts, cubed
Instructions:
  • Prepare the batter: In a large bowl, mix flour, baking powder, and salt. Add sesame oil and gradually whisk in water until smooth, resembling cream. Allow the batter to rest for a minimum of 30 minutes.
  • Heat a generous amount of oil in a deep pan or wok until it reaches 375 degrees F (190 degrees C).
  • Coat chicken: Combine cornstarch and white pepper in a large dish. Coat chicken in cornstarch mixture, then dip in batter to evenly cover each piece.
  • In batches, fry the coated chicken in hot oil until golden and cooked through, which should take about 4 to 5 minutes. Use an instant-read thermometer to ensure the center reaches 165°F (74°C). Place the fried chicken on a clean kitchen towel to drain using a slotted spoon.
