Delicious and versatile coffee cake recipe using seasonal fruits.
Ingredients:
  • 1 1/2 cups Gold Medal™ self-rising flour
  • 1/2 cup sugar
  • 1/2 cup butter or margarine
  • 1/2 cup milk
  • 1 egg, beaten
  • 3 cups sliced fresh plums, peaches, apples or pears
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons butter or margarine, melted
Instructions:
  • Preheat oven to 375°F and grease a 13x9-inch pan with shortening or cooking spray. In a large bowl, combine flour and 1/2 cup sugar. Use a pastry blender or 2 table knives to cut in 1/2 cup butter until mixture looks like coarse crumbs. Add milk and egg, and stir until just blended. Spread the batter evenly in the pan.
  • Layer the sliced fruit neatly on top of the batter. Combine 1/2 cup sugar and cinnamon in a small bowl, then sprinkle this mixture evenly over the fruit. Finish by drizzling melted butter on top.
  • Bake until beautifully golden brown, whether serving warm or chilled.
