Dairy-Free Apple Coffee Cake

Easy-to-make fruit-filled coffee cake.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 0.5 cup orange juice
  • 4 apples - peeled, cored and sliced
  • 5 tablespoons white sugar
  • 5 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and gently grease a 10-inch tube pan.
  • Combine flour and baking powder in a large bowl. In a separate bowl, beat together 2 cups sugar, vegetable oil, and eggs. Mix the egg mixture into the flour mixture with orange juice until smooth. In a small bowl, blend white sugar, brown sugar, and cinnamon.
  • Alternate pouring half of the batter into the pan, layer half of the apples, and sprinkle half of the cinnamon sugar mixture. Repeat with the remaining ingredients in the same order.
  • Bake in the preheated oven for 50 to 70 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool for 15 to 20 minutes, then flip onto a plate and serve.
