Dairy-Free Spiced Apple French Toast: A sweet and simple morning treat.
Ingredients:
  • cooking spray
  • 4 large Granny Smith apples - peeled, cored, and sliced
  • 3 tablespoons white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cumin
  • 1 tablespoon lemon juice, or as needed
  • 2 cups plain soy milk
  • 0.5 cup apple butter
  • 12 (1/2 inch thick) slices soft-crust French bread
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously coat a baking sheet with cooking spray.
  • Spray a nonstick skillet with cooking spray and heat over medium-high. Cook apples until softened for 5 to 7 minutes. Lower heat to medium, stir in sugar, cinnamon, nutmeg, and cumin. Cook until tender for 5 to 10 more minutes, stirring occasionally. Finish by stirring in lemon juice and taking it off the heat.
  • In a blender, combine soy milk, apple butter, vanilla extract, cinnamon, and salt. Blend until creamy. Transfer the mixture to a shallow bowl.
  • Prepare a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into a soy milk batter, ensuring they are evenly coated. Cook in the skillet until both sides are lightly browned, for about 1 to 2 minutes each. Place the bread on the prepared baking sheet.
  • Bake until beautifully golden, around 4 minutes in the preheated oven.
  • Lay 2 slices of bread on each plate and evenly distribute the topping among them.
