Bake Chef John's mini corn dogs for a healthier twist on classic carnival treats.
Ingredients:
  • 1 cup cornmeal
  • 1 teaspoon white vinegar
  • 4 hot dogs
  • 1 large egg, beaten
  • 4 tablespoons vegetable oil, divided
  • 1 cup all-purpose flour
  • 1.75 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.75 teaspoon kosher salt
  • 1 pinch cayenne pepper
Instructions:
  • Preheat your oven to 450°F (230°C) for baking perfection.
  • Slice each hot dog into 6 bite-sized pieces.
  • In a mixing bowl, combine egg, 2 tablespoons vegetable oil, sugar, and milk. Whisk until smooth. Add white vinegar, cornmeal, flour, baking powder, baking soda, kosher salt, and cayenne. Mix vigorously until batter is thin and well combined. Let batter rest for 10 minutes before proceeding.
  • Brush two 12-cup mini muffin tins with a generous amount of vegetable oil. Fill each muffin cup almost to the top and delicately insert a piece of hot dog into the center of each.
  • Bake in the preheated oven for around 18 minutes until beautifully browned. Allow it to cool for at least 5 minutes before gently removing from the pan.
