Easy garlic butter prawn parcels recipe

Quick prawn parcels cooked in garlic butter and dijon mustard for a flavorful dish in 30 minutes - ideal for impromptu dinner parties.
Ingredients:
  • 125g packet Garlic butter, softened
  • 11.80 gm Dijon mustard
  • 1⁄250.00 ml fresh continental parsley leaves, finely chopped
  • 150g green beans, cut in half diagonally
  • 1 bunch asparagus, trimmed, halved crossways
  • 30g baby spinach
  • 400g peeled green prawns, tails intact
  • Lemon wedges, to serve
  • Grilled sourdough baguette slices, to serve
Instructions:
  • Preheat oven to 220C/200C fan forced. Cut four 30cm squares of baking paper. Combine butter, mustard, and half of the parsley in a small bowl. Season, then mix until well combined.
  • Arrange beans, asparagus, and spinach neatly in the center of each paper square. Place prawns on top and drizzle with the butter mixture. Fold two sides of the paper over the filling, then tuck in the remaining sides to seal the parcels. Place on a baking tray.
  • Bake for 10 minutes, or until prawns are perfectly cooked. Place each parcel on a serving plate, open them carefully, and sprinkle with the remaining parsley. Serve with lemon wedges and sourdough.
