Quick and flavorful garlic shrimp pasta with asparagus and cherry tomatoes - a delightful spring dinner option.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 0.75 cup unsalted butter
  • 2.5 tablespoons olive oil, or to taste, divided
  • 2 cloves garlic, minced
  • 1 pound raw shrimp, peeled and deveined
  • salt and ground black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons capers
  • 1 bunch fresh asparagus, trimmed
  • 0.5 cup shredded Parmesan cheese
  • 1 lemon, quartered
Instructions:
  • 1. Bring a large pot of salted water to a lively boil. Cook penne until al dente, about 11 minutes, stirring occasionally.
  • While the pasta cooks, melt butter with 2 tablespoons of olive oil in a large pan over medium heat. Sauté garlic until fragrant, about 2 minutes, being careful not to burn it. Add shrimp, salt, and pepper. Cook for 2 minutes, then stir in tomatoes and capers. Cover and simmer over medium-low heat until shrimp are pink throughout, about 3 minutes.
  • After draining the penne, place it back into the pot and coat it with 1/2 tablespoon of luxurious olive oil. Keep warm.
  • Fill a pot with 1 inch of water and insert a steamer basket. Bring to a boil, then add asparagus. Cover and steam for around 3 minutes, until al dente.
  • Plate a quarter portion of spaghetti, along with a quarter portion of asparagus and shrimp, ensuring the butter sauce is included. Top it off with Parmesan cheese and serve with a lemon wedge. Repeat this process for each serving.
