Delicious, buttery icebox cookies made with easy dough that can be frozen and baked anytime!
Ingredients:
  • 5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 pound margarine
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 3 eggs
  • 1 cup chopped nuts
Instructions:
  • Combine the flour, baking soda, and cinnamon in a large bowl, whisking until fully mixed; set aside.
  • In a large bowl, use an electric mixer to beat together butter, white sugar, and brown sugar until smooth. Add eggs one at a time, ensuring each is fully blended before adding the next one. Mix in the flour mixture until just combined, then gently fold in the chopped nuts until evenly distributed.
  • Transfer cookie dough onto a sheet of waxed paper and shape into a log. Wrap tightly in the waxed paper and chill until firm, approximately 4 hours.
  • Preheat the oven to 350°F (175°C) and lightly coat baking sheets with cooking spray.
  • 1. Unwrap the dough and slice it into 1/4-inch pieces. 2. Place the cookie slices on baking sheets, with 1-inch spacing between each slice. 3. Bake in the preheated oven until the edges turn golden, for about 8 to 10 minutes. 4. Let the cookies cool on the baking sheet for 1 minute before transferring them to a wire rack to cool completely.
