Succulent honey-garlic chicken cooked in an Instant Pot for a tasty and convenient weeknight dinner. Serve over rice, noodles, or cauliflower rice for a satisfying meal.
Ingredients:
  • 1 tablespoon chicken soup base (such as Better than Bouillon® Roasted Chicken Base)
  • 1 cup hot water
  • 1 tablespoon avocado oil
  • 1 tablespoon butter
  • 3 (6 ounce) bone-in chicken thighs, with skin
  • 3 (4 ounce) bone-in chicken drumsticks, with skin
  • 0.33333334326744 cup honey
  • 2 tablespoons teriyaki marinade (such as Kikkoman®)
  • 1 tablespoon minced garlic, or more to taste
Instructions:
  • Dissolve chicken soup base in hot water until smooth.
  • Preheat your Instant Pot by selecting the Saute function. Melt butter with avocado oil until sizzling. Place chicken pieces skin-side down and sear for 2 to 3 minutes until golden brown, then flip to brown the other side.
  • Remove the pot from the heat and transfer the chicken to a plate. Add half of the soup base to deglaze the pot, using a spatula to scrape up the flavorful browned bits.
  • Mix in the honey, teriyaki marinade, and garlic with the rest of the soup base until fully combined.
  • Gently nestle the trivet into the pot before arranging the chicken in a single layer. Drizzle the honey mixture over the chicken, then secure the lid tightly. Choose high pressure per your pot's guidelines and set the timer for 12 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 10 minutes, then switch to the quick-release method for about 5 minutes. Unlock and remove the lid to enjoy your meal!
