Easy Lasagna Squares

Quick cheesy lasagna bake using Bisquick instead of noodles, perfect for busy weeknights!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried basil leaves
  • 1 can (6 oz) tomato paste
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1/2 cup small-curd cottage cheese
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • 2/3 cup Original Bisquick™ mix
  • 2 eggs
  • Cherry tomatoes, quartered, if desired
  • Fresh basil leaves, if desired
Instructions:
  • Preheat oven to 400°F. Cook beef in a 10-inch skillet over medium-high heat for 5 to 7 minutes until fully cooked; remember to stir occasionally. Drain any excess fat, then add oregano, basil, tomato paste, and 1/2 cup of mozzarella cheese to the skillet.
  • In a 2-quart glass baking dish, generously coat with cooking spray. Create layers by spreading cottage cheese and Parmesan cheese in the dish. Evenly spread the beef mixture on top of the cheese layers.
  • Blend Bisquick mix, milk, and eggs in a medium bowl until smooth. Transfer the mixture into a dish.
  • Bake for 30 to 35 minutes, or until a knife inserted in the center comes out clean.
  • Finish by generously sprinkling the remaining 1 1/2 cups of mozzarella cheese over the top. Bake for an additional 2 to 3 minutes, or until the cheese is wonderfully melted. Allow it to stand for 5 minutes before serving, and then adorn with fresh tomatoes and basil leaves for the perfect finishing touch.
