Whip up a quick and elegant lemon mousse with creamy lemon curd and whipped cream, then chill for an hour before serving. Perfect for a fancy dessert!
Ingredients:
  • 0.5 cup heavy cream
  • 1 tablespoon confectioners' sugar
  • 1 (4 ounce) package cream cheese, softened
  • 1.5 cups lemon curd
  • 0.5 teaspoon vanilla extract
  • 4 tablespoons mixed fresh berries
  • 4 fresh mint leaves
Instructions:
  • In a chilled glass or metal bowl, use an electric mixer to beat heavy cream until frothy. Gradually add confectioners' sugar while beating until stiff peaks form, starting on low speed and increasing to high speed for around 2 minutes. Set aside.
  • In a bowl, use an electric mixer to whip the cream cheese until smooth, for 1 to 2 minutes. Mix in the lemon curd and vanilla extract until creamy and well combined, for 1 to 2 minutes.
  • Gently mix the whipped cream into the lemon mixture. Spoon the mousse evenly into 4 dessert dishes or ramekins. Refrigerate for a minimum of 1 hour before enjoying.
  • Top with luscious fresh berries and fragrant mint leaves.
