Make quick mahi mahi fish tacos with fresh pico de gallo for a simple and satisfying weeknight meal.
Ingredients:
  • 1 teaspoon adobo seasoning
  • 4 (3 ounce) fillets mahi mahi
  • 1 dash lime juice
  • 1 medium tomato, diced
  • 0.5 red onion, chopped
  • 1 cup chopped fresh cilantro
  • 2 scallions, thinly sliced
  • 2 tablespoons lime juice
  • cooking spray
  • 8 (6 inch) corn tortillas
  • 1 avocado, sliced
Instructions:
  • Sprinkle mahi mahi with a gentle touch of adobo seasoning and a hint of fresh lime juice.
  • Prepare the pico de gallo by combining tomatoes, red onions, cilantro, scallions, and 2 tablespoons of lime juice in a bowl. Let it sit for a moment to let the flavors marry.
  • - Coat a nonstick skillet with a spritz of cooking spray and heat over medium-high heat. Sear mahi mahi until golden brown on each side, approximately 2 minutes. Lower the heat to low, cover, and continue cooking until the fish easily flakes with a fork, around 10 minutes.
  • Warm corn tortillas by wrapping them in damp paper towels and microwaving for 30 seconds to 1 minute, until heated through.
  • Lay half of the mahi mahi fillet on each tortilla. Add 2 slices of avocado and a scoop of pico de gallo to each.
