Tangy Thai mango salad with zesty lime-fish sauce dressing.
Ingredients:
  • 2 firm green mangoes - peeled, pitted, and cut into matchsticks
  • 0.25 purple onion, thinly sliced
  • 0.25 red bell pepper, thinly sliced
  • 3 sprigs cilantro, or more to taste, leaves removed and stems discarded
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon crushed peanuts
Instructions:
  • Combine the ripe mangoes, fresh onion, vibrant red bell pepper, and fragrant cilantro leaves in a bowl.
  • Combine lime juice, fish sauce, and brown sugar in a separate bowl, stirring until sugar is dissolved. Drizzle over the mango mixture and mix gently. Sprinkle salad with peanuts to finish.
