Whip up cute mini pumpkin pies using a muffin tin, canned pie filling, and a flaky homemade crust for delightful fall treats.
Ingredients:
  • 1 (15 ounce) can pumpkin pie filling
  • 4 cups all-purpose flour
  • 1.75 cups shortening
  • 3 tablespoons white sugar
  • 2 teaspoons salt
  • 0.5 cup water
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) and generously grease a 12-cup muffin tin.
  • In a bowl, mix together flour, shortening, sugar, and salt using a pastry cutter until the mixture is crumbly.
  • Combine water and egg in a bowl, then add to the flour mixture. Stir until dough forms.
  • Divide the dough into 12 equal portions, press each portion into the bottom and sides of the muffin cups, then fill with pie filling and level the tops.
  • Bake until the crust is golden and set, approximately 15-18 minutes, then cool for 10 minutes.
