Indulgent Nanaimo bars with a twist - hot cocoa crust, creamy vanilla center, and milk chocolate topping. Chill before enjoying!
Ingredients:
  • 0.5 cup butter
  • 2 (1 ounce) envelopes instant hot chocolate mix
  • 1 teaspoon vanilla extract
  • 1 egg, beaten
  • 2 cups graham cracker crumbs
  • 1 cup flaked coconut
  • 0.5 cup chopped walnuts
  • 0.25 cup cream cheese, softened
  • 0.25 cup milk, or as needed
  • 2 tablespoons instant vanilla pudding mix
  • 2 cups confectioners' sugar
  • 4 (1 ounce) squares milk chocolate
  • 1 tablespoon butter
Instructions:
  • Prepare the square pan by greasing it. Melt 1/2 cup of butter in a saucepan over low heat. Add cocoa mix, vanilla extract, and egg. Stir until thickened for about 1 minute, being careful not to boil. Remove from heat and mix in graham cracker crumbs, 1 cup coconut, and walnuts. Combine well and press into the prepared pan. Refrigerate the crust for around 1 hour.
  • In a mixing bowl, combine cream cheese, milk, vanilla pudding mix, and confectioners' sugar. Use an electric mixer to beat until smooth and fluffy. Adjust consistency by adding milk, 1/2 teaspoon at a time if needed. Spread the creamy mixture evenly over the crust and refrigerate until firm, about 1 hour.
  • Combine milk chocolate and butter in a saucepan over low heat, stirring until smooth. Evenly spread over the vanilla layer and refrigerate for 30 minutes until firm but not hard. Cut into bars, then chill for an additional 30 minutes before serving cold.
