Foolproof pork recipe yields juicy, versatile meat for sandwiches, tacos, stews, and pasta.
Ingredients:
  • 1 (5 pound) bone-in pork butt
  • 8 cloves garlic
  • 4 teaspoons kosher salt
  • 1 tablespoon ground black pepper
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • 1. Make small incisions in the pork using a paring knife, ensuring they are about 1 1/2 inches deep. Insert one garlic clove into each slit. Season the pork generously with salt and pepper on all sides. Arrange the pork in a 9x13-inch baking dish with the fat-side facing up.
  • Bake in the hot oven for 30 minutes.
  • Lower the oven temperature to 325 degrees F (165 degrees C). Gently pour 3/4 cup water around the edges of the pork. Cover with foil and cook for 1 1/2 hours. Uncover and cook until the pork is tender and easily pulls away from the bone, approximately another 1 1/2 hours. Use an instant-read thermometer to ensure the center reaches at least 145 degrees F (63 degrees C).
  • Take out of the oven and allow to rest for 20 minutes. Discard the large fat layer and any other sizable pieces of fat. Tear apart and shred the pork.
