Impress your guests with a memorable and delicious holiday spread that will leave them raving until next year!
Ingredients:
  • 63.13 gm thickened cream
  • 180.00 gm thick vanilla custard
  • 6 passionfruit
Instructions:
  • In a bowl, whip cream until soft peaks form. Fold in custard. Pour mixture into a 5cm-deep, 10cm x 20cm plastic container. Cover with plastic wrap pressing it onto the surface. Freeze for 4 to 5 hours or until almost firm.
  • Halve the passionfruits and scoop out the pulp into a bowl. Then, place the empty passionfruit shells cut side up in a 12-hole patty pan with 1 1/2 tablespoon capacity.
  • 1. Take the chilled cream mixture out of the freezer and blend until smooth. 2. Transfer the creamy mixture to a bowl and gently mix in 1/4 cup of passionfruit pulp. 3. Fill each passionfruit shell with a heaping tablespoon of the passionfruit mixture, and repeat for the rest of the shells.
  • Wrap the surface with plastic wrap and foil, then freeze overnight or until firm.
  • Take shells out of the freezer and allow them to soften for 5 minutes before serving.
