Create a refreshing tropical dessert to finish off a summer meal.
Ingredients:
  • 185ml (3/4 cup) passionfruit pulp
  • 80g (1/2 cup) icing sugar mixture
  • 80ml (1/3 cup) Malibu coconut liqueur
  • 8 scoops vanilla ice-cream
  • 20 lychees, peeled, stones removed
Instructions:
  • Combine the passionfruit, icing sugar, and Malibu in a medium jug, stirring until the icing sugar has dissolved.
  • Scoop the ice-cream and lychees into individual serving glasses, then generously drizzle the passionfruit mixture over them before serving.
