Ingredients:
  • 80ml passionfruit
  • 60g caster sugar
  • 60ml water
  • 350g (about 16) lychees
  • 8 x 1cm thick slices madeira cake
  • 80ml thickened cream
Instructions:
  • In a small saucepan, mix together the passionfruit pulp, sugar, and water until the sugar is dissolved. Bring to a boil, then simmer for 5 minutes. Strain the mixture and let it cool slightly.
  • Peel the lychees using your fingers, then halve them around the stone. Remove and discard the stone.
  • On each dessert plate, assemble a layer with a slice of Madeira cake topped with a generous amount of cream and some lychees. Add another layer of cake on top and drizzle with passionfruit syrup. Finish by topping with more lychees before serving.
