Easy passionfruit skin jam recipe

Turn passionfruit skins into delicious breakfast jam with sugar, water, and simple instructions provided.
Ingredients:
  • 4 passionfruit, 8 halves
  • 430.00 gm caster sugar
  • 123.75 gm red wine
Instructions:
  • Remove the pulp from 8 passionfruit halves, saving the pulp for later. Place the skins cut-side down in a saucepan and cover with water. Bring to a boil, then simmer over low heat with the lid slightly ajar for 1 1/2 hours until very tender. Drain, saving the liquid. Allow the skins to cool.
  • Remove the jelly-like flesh from the skins to collect 2 cups (add reserved liquid as necessary). Combine with caster sugar and red wine in a saucepan.
  • Blend until smooth using a stick blender. Bring to a boil, then simmer over medium heat, stirring occasionally, for 50 minutes or until a small amount sets on a chilled saucer. Transfer to sterilized jars and seal.
