Make protein-packed turkey pasta bake with hidden veggies for a kid-friendly meal.
Ingredients:
  • 4.60 gm olive oil
  • 1 medium onion, coarsely grated
  • 2 medium carrots, coarsely grated
  • 1 medium zucchini, coarsely grated
  • 240g turkey breast mince
  • 400g Canned Diced Tomatoes
  • 145g dried pasta, elbow variety
  • 2 tsp fresh thyme, finely chopped, extra sprigs to serve
  • 60g mozzarella, grated
Instructions:
  • Preheat the oven to 180°C. In a large saucepan over medium-high heat, sauté onion, garlic, carrot, and zucchini for 5 minutes until softened. Add the mince and cook for another 5 minutes, breaking up lumps with a spatula.
  • Pour water into the pan after filling a tomato can three-quarters full with it and adding the water. Season with salt and pepper before stirring in pasta and thyme until well combined.
  • Pour the pasta mixture into a large 8-cup (4L) baking dish and generously sprinkle with cheese. Bake in the oven for 35 minutes, or until the cheese is golden and bubbling and the pasta is fully cooked. Let it sit for 5 minutes before serving, and garnish with extra thyme sprigs.
