Make-Ahead Pizza Casserole

Whip up this quick and easy pasta bake in just 20 minutes for a delicious make-ahead dinner option!
Ingredients:
  • 1 lb mild Italian pork sausage
  • 2 cups water
  • 1 can (15 oz) pizza sauce
  • 1 can (14.5 oz) diced tomatoes with sweet onion, undrained
  • 4 cups uncooked rotini pasta (10 oz)
  • 1 can (2 1/4 oz) sliced ripe olives, drained
  • 1 1/2 cups shredded mozzarella or pizza cheese blend (6 oz)
Instructions:
  • In a 10-inch skillet, sauté the sausage over medium-high heat for 8 to 10 minutes, stirring often, until it is cooked through; then drain excess fat.
  • In an ungreased 13x9-inch (3-quart) glass baking dish, combine water, pizza sauce, tomatoes, cooked sausage, uncooked pasta, and olives, making sure the pasta is fully covered with sauce. Cover tightly with foil and refrigerate for at least 8 hours or overnight.
  • Preheat the oven to 350°F. Give the casserole a good stir, cover with foil, and bake for 1 to 1 hour 15 minutes until it's nice and bubbly.
  • Uncover the baking dish and stir the mixture. Sprinkle with cheese and bake uncovered for an additional 5 minutes, or until the cheese is melted to a golden perfection.
