Quick and easy peanut butter fudge: Melt marshmallows, sugar, and peanut butter for a creamy delight, perfect for gifting.
Ingredients:
  • 1/2 cup whole milk
  • 6 regular-sized marshmallows , certified gluten-free if needed
  • 3/4 cup (150 g) sugar
  • 3/4 cup (165 g) packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups (420 g) smooth peanut butter (not natural peanut butter, see Recipe Note)
Instructions:
  • Grease an 8 x 8-inch baking pan with cooking oil and line it with parchment paper.
  • Gently melt marshmallows in warm milk: Combine marshmallows and milk in a medium pan over medium-low heat. Stir continuously until marshmallows have completely melted. Adjust heat if milk begins to foam.
  • Combine both sugars into the melted marshmallows and cook on medium-low heat until smooth. Then mix in the vanilla, salt, and peanut butter until fully incorporated.
  • Smooth and uniform, pour the hot fudge into the prepared pan, then use a spatula or butter knife to create an even surface.
  • Chill overnight for optimal flavor: Allow the fudge to cool to room temperature in the pan before refrigerating it overnight for best results.
  • Cut the fudge into 1-inch squares by lifting it from the pan using the parchment paper. Store the squares in an airtight container; they will stay fresh for up to a week at room temperature or 2 to 3 weeks in the refrigerator.
