Fluffy peppermint marshmallows, perfect for chocolate fondue or hot cocoa in winter.
Ingredients:
  • 1 serving cooking spray
  • 6 tablespoons warm water
  • 2 envelopes unflavored gelatin
  • 1.3333333730698 cups white sugar
  • 0.5 cup light corn syrup, plus
  • 2 tablespoons light corn syrup
  • 0.25 cup water
  • 0.25 teaspoon salt
  • 1.5 teaspoons vanilla extract
  • 0.75 teaspoon pure peppermint extract
  • red food coloring
  • 0.25 cup cornstarch
  • 0.25 cup confectioners' sugar
Instructions:
  • Prepare your 9x9 pan by lining it with plastic wrap, making sure to leave enough to cover the top. Lightly spray the plastic wrap with cooking spray. In a large bowl, pour the 6 tablespoons of warm water and sprinkle the gelatin on top. Allow the gelatin to soften in the water for 5 minutes.
  • In a tall saucepan, mix white sugar, corn syrup, and 1/4 cup water. Heat the mixture, stirring constantly, until it boils and reaches 240 degrees F on a candy thermometer. Pour the hot syrup over softened gelatin, add salt, and beat with an electric mixer on high speed for 8 to 10 minutes until it increases in volume and holds a peak. Finally, stir in vanilla and peppermint extracts.
  • Pour the mixture into the prepared pan and gently swirl in a few drops of red food coloring using a toothpick. Cover loosely with plastic wrap and allow it to rest at room temperature for 4 hours. Cut into 18 squares using a knife sprayed with cooking spray. Mix the cornstarch and powdered sugar in a bowl and coat the marshmallows with the mixture. Store them in an airtight container or resealable plastic bag.
