Transform jalapenos, carrots, and onions into tangy pickled delights perfect for any meal.
Ingredients:
  • 2 carrots, cut into 1/4-inch rounds
  • 2 cups water
  • 1 small white onion, thinly sliced
  • 1.5 cups cider vinegar
  • 2 teaspoons coarse salt
  • 1 teaspoon white sugar
  • 0.25 teaspoon whole black peppercorns
  • 8 jalapeno peppers, cut into 1/4-inch slices
Instructions:
  • In a saucepan, combine carrots, water, onion, cider vinegar, salt, sugar, peppercorns, and bay leaves. Bring to a boil, then simmer for about 2 minutes until sugar and salt dissolve. Pour the mixture over jalapenos and cover with a plate to keep vegetables submerged. Allow to cool for approximately 1 hour.
  • In a large bowl, combine jalapenos and carrot mixture. Cover with a plate to keep the vegetables submerged and let sit for about 1 hour to blend flavors. Remove bay leaves. Transfer the mixture to a glass jar, cover, and refrigerate.
