Transform your pork chops into juicy deliciousness with a zesty brine of vinegar, citrus, and flavorful spices.
Ingredients:
  • 2 cups cold water
  • 1/4 cup distilled white vinegar
  • 1/4 cup Morton’s kosher salt
  • 1/4 cup light or dark brown sugar, tightly packed
  • 3 tablespoons black peppercorns
  • 2 tablespoons dried oregano
  • 2 dried bay leaves
  • 1 small yellow onion, peeled and quartered
  • 4 large cloves garlic, peeled and smashed
  • 2 limes, quartered
  • 1 orange, quartered
  • 4 cups ice
Instructions:
  • To prepare the brine, combine water, vinegar, salt, brown sugar, black peppercorns, oregano, bay leaves, onion, garlic, lime juice, orange juice, and citrus peels in a 3-quart pot. Mix everything together. If using the same pot to brine the pork, make sure to use an 8-quart pot or ensure it's large enough to hold the brine, ice, and pork chops.
  • Combine salt and sugar in a saucepan. Bring to a gentle boil over medium-high heat, stirring occasionally to help the ingredients dissolve completely.
  • Chill the brine: Once it reaches a boil, take it off the heat and let it cool for 30 minutes.
  • Place ice in an 8-quart container, then stir in the cooled brine with the aromatics and spices. The brine is now ready for the pork chops, enough for about 2 1/2 pounds. Enjoy and please leave a review!
